Who makes the best palacinke in Croatia?
Hands down my baka (grandma)! One of my favorite childhood memories is walking into her house on Sundays. First, the smell of palacinke would fill the room and then I would see the large stack of perfectly thin palacinke. The best part? Sitting down with her to enjoy them. I would top it with her homemade plum jam... mmm to die for! I can taste them and hear her talking to me as I write this.

1 cup all-purpose flour
1 to 2 cups of milk
1/2 teaspoon sugar
dash of salt
oil (for frying)
Filling of choice
To mix the batter, use a whisk or mixer.
Whisk the eggs in a mixing bowl.
Stir in milk to combine.
Add a pinch of salt and ½ teaspoon of sugar.
Slowly add flour, stirring constantly until combined ensuring no granules.
If needed, add more milk to make a thin runny batter that will easily pour and spread in a pan.
Heat a lightly oiled pan over medium heat.
Pour a scoop of batter into the pan and tilt the pan around until the batter covers the pan. Use just enough batter to make a thin palacinka.
Cook on one side until lightly browned, flip and cook on the other side.
Continue cooking until batter is gone.
Top with your desired filling & ENJOY!
